Best Bite of the Month: Scottish honey cake

Grease and line a 7-inch cake tin. Cream together the butter and sugar in a bowl.
Ingredients
3oz butter
3oz sugar
2 beaten eggs
8oz self-raising flour
4oz clear Scottish honey
1 teaspoon baking powder
Add the eggs a little at a time then beat in the honey. Sift together the flour and baking powder and stir into the honey mixture. Transfer the mixture to the tin and bake for 40 mins at 170C (340F/Gas Mark 3). Ice with a mixture of icing sugar and more honey for a teatime treat.
